Directions:

3 pounds red potatoes, cut into chunks
1/4 cup butter
2 ounces cream cheese, cut into pieces
1/4 cup milk
2 tablespoons bacon bits
1/2 cup shredded Colby-Monterrey Jack
cheese
2 tablespoons Dick’s Sensational Secret Seasoning Salt
1/2 teaspoon salt, or to taste
Boil potatoes until tender, approximately 20 minutes. Drain the water.
Mash the potatoes while adding butter and cream cheese. Stir in the milk, cheese, bacon bits and Dick’s Sensational Secret Seasoning Salt. Add salt to taste.

2 tablespoons butter or margarine
1 cup chopped onion
3 cloves garlic, minced
1 pound of ground beef or ground turkey
1 large egg
½ cup ketchup
½ cup Italian bread crumbs
2 teaspoons Worcestershire sauce
½ teaspoon parmesan cheese
2 3/4 teaspoons Dick’s Secret Seasoning Salt
Heat in oven to 350 degrees. Melt butter in a small skillet over medium heat. Add onion, garlic and ½ teaspoons of Dick’s Secret Seasoning Salt. Cook approximately 5 minutes and remove from heat.
Mix ground beef or turkey, bread crumbs, egg, ¼ cup ketchup, Worcestershire sauce, 2 teaspoons of Dick’s Secret Seasoning Salt. Add onion and garlic mixture and mix well. Pack into a 8 x4 loaf pan. Spread remaining ketchup on top, sprinkle Parmesan and Dick’s Secret Seasoning across loaf.
Bake for 50 to 55 minutes. (10 minutes longer for a crispier loaf).

2 large ripe avocados, mashed
2 medium tomatoes, finely chopped
1 medium onion, chopped or minced
1 large clove of garlic, minced
2 tablespoons lemon juice
1 teaspoon Dick’s Sensational Secret Seasoning Salt (add ½ teaspoon more for spicy guacamole)
Tortilla Chips, for dipping
Mix all ingredients well. Cover and refrigerate for 1 hour to blend the seasoning.

- 1 Tablespoon Dick’s Sensational Secret Seasoning Salt
- ½ lb. fresh shiitake mushrooms
- 1 tablespoon Olive Oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon freshly ground pepper
- 4 (5 to 6 oz.) beef tenderloin steaks (1 to ½ inches thick)
- 2 shallots, finely chopped
- 1 cup Madeira
- ½ cup condensed beef broth, undiluted
- ¼ cup whipping cream
Sprinkle Dick’s SSS generously over tenderloins and set aside. Remove stems from mushrooms, discarding stems and set aside. Combine oil, 2 cloves garlic, thyme and pepper. Coat the steaks with the mixture. Place a large non-stick skillet over medium high until hot. Cook steak 12 minutes or until desired doneness. Remove steaks and keep warm, reserve drippings. Cook shallots and remaining garlic in drippings, stirring constantly. Add Madeira, bring to a boil. Reduce heat and simmer for 10 minutes or until it has reduced to ½ cup. Add broth and mushrooms; cook 3 minutes or until tender. Remove from heat, stir in whipping cream. Place steaks on plates and spoon sauce around steaks.

Cut vegetables to bite size and place in foil pan. Drizzle with olive oil and season to taste with Dick’s Sensational Secret Seasoning Salt. Mix Well. Cover the pan with foil and cook on the grill or in the oven for 45-55 minutes or until vegetables are cooked.

Dick’s Sensational Secret Seasoning Salt
Put almonds and oil in Ziploc baggie, toss until almonds are covered in oil. Spread onto cookie sheet. Sprinkle Dick's seasoning to taste on top. Bake at 200 degrees until slightly browned. (Approx. 20-30min. depending on size of almonds) Cool and serve. Enjoy!

Maple-Soy sauce Chicken & Carrots
4 Boneless chicken breasts
¼ cup Maple syrup
¼ Soy sauce
1 package of frozen carrots
Bacon
Dick’s Sensational Secret Seasoning Salt
Dick’s Sensational Secret Seasoning Salt
Pre heat the oven to about 350.
Mix maple syrup and soy sauce together. The syrup and soy sauce have a sweet-salty taste, so if you prefer more sweet just add a little more maple syrup. You need about a half a cup of marinade, so it depends on your preference. I prefer a little more soy sauce in my marinade. (I also use low sodium soy sauce.)
In a rectangle glass baking dish, put in your chicken and season it with Dick’s seasoning.
Pour the frozen carrots over the chicken and lightly sprinkle with Dick’s seasoning. Pour marinade over chicken and carrots and let sit for about a half hour. Before putting the chicken in the oven, take a few strips of bacon and place them on top of the carrots.
Bake for about 45 min or until chicken is done.

Dice up veggies and put them in a pan with half a stick of butter. Once the butter has melted stir veggies until butter has been evenly spread out. Sprinkle Dick’s seasoning and sauté the veggies until they are tender.

Dick’s Let’s Talk Turkey
• Turkey or large roasting chicken
• Dick’s Sensational Secret Seasoning Salt
• 1 Stick of butter
• Fruit of your choice (enough to stuff the bird)
• 2 – 8 oz cans chicken broth
• 1 – 8 oz glass of white wine
• 1 quart Orange Juice
• Oil
Take the turkey and sprinkle the inside cavity generously with Dick’s Sensational Secret Seasoning Salt. Put one stick of butter into the cavity and then stuff with any kind of fresh fruit; apples, pears, oranges, pineapples or any fruit of your liking.
Put the turkey in an aluminum throw away pan. Add a quart of orange juice, wine, and chicken broth. Rub the outside of the turkey with oil and sprinkle generously with Dick’s Sensational Secret Seasoning Salt.
Cover turkey with aluminum foil and cook at 350˚ for 3 – 4 hours depending on the size of your turkey. Baste several times while cooking. Uncover the turkey for the last hour so it will brown.
Remove the turkey from the oven and let stand for 20 minutes before slicing. Make your gravy with the juice and drippings left in the pan. It will be the best turkey you will ever eat.
Grilling Method:
If you prefer to cook your turkey on the grill, cook the turkey at between 350˚ - 400˚ for between 1.5 and 4.5 hours depending on the turkey. Cook until internal temperature (away from the bone) is at least 170˚

• Large bag of Pepperidge Farm seasoned stuffing mix
• 1 onion
• 3-4 stalks of celery chopped
• 1 large Granny Smith apple, cut in wedges with the peel on
• 1 can water chestnuts
• 1 can all white meat chicken
• 2 Tablespoons Dick’s Sensational Secret Seasoning Salt
• Chicken Stock or 1 can chicken broth
• ¼ Stick of butter
Mix all ingredients well & stuff turkey or chicken. Any remaining stuffing can be placed in a baking dish and baked at 375˚ for 45 Minutes

Grilled Asparagus
Trim Asparagus an inch or so from the end and place in a large sealable bag. Add olive oil. Add salt, pepper and Dick’s Sensational Secret Seasoning Salt to taste. Toss asparagus in bag until evenly coated.
Place asparagus in a grill basket and place on hot grill stirring frequently. Grill until the asparagus just begins to blacken.

• 1 1/2 pounds ground chicken
• 1 tablespoon Dick’s Seasoning Salt
• 1 large egg
• 1 cup grated Parmesan Cheese
• ½ cup Italian bread crumbs
• ¼ cup chopped parsley leaves
• 4 tablespoons Extra-virgin olive oil
• 2 large cloves garlic minced
• 1/4 teaspoon red pepper flakes
• 4 sub rolls
• 24 oz pasta sauce
• 1 1/2 cups shredded provolone
Preheat oven to 425 degrees
Mix chicken, seasoning, a tablespoon of olive oil, egg, bread crumbs, parsley and ½ cup parmesan cheese in a bowl. Mix together, divide the mixture in twelve parts and ball each part into meatballs. Place meatballs on an lightly greased cookie sheet and bake for 15 minutes or until golden brown.
In a sauce pan combine olive oil, crushed pepper flakes and garlic, sauté lightly over medium heat until the garlic is golden brown. Add pasta sauce, stir occasional until heated.
Remove the meatballs from the oven and place the meatballs in the sauce and reduce the temperature to low.
Set oven to Broil
Cut sub rolls to open, place meatball sauce mixture in the roll and cover with remaining parmesan and provolone cheese. Place in oven until the cheese melts.
